My husband accidentally purchased two heads of cauliflower so I had to figure out what to do with the extra one. Below is what I came up with for a family get together where even the non vegans liked it!
1 head of cauliflower chopped into bite sized pieces 1 T fresh chopped ginger 3-4 cloves of garlic chopped or pressed 1/3 cup of SAN-J Gluten Free asian dressing - Tamari Sesame 1-2 t siracha 1/4 cup brown sugar 1 cup peanut butter (I used crunchy) 1/4 cup warm water Pre-heat oven to 400 degrees. Mix everything together well except the cauliflower. Coat the cauliflower well with the mix. Bake for 45 minutes to an hour or until cauliflower is soft. Enjoy!
